Upgrade Lexical and bring Payload table features closer to the upstream Lexical demo

Payload's Lexical table module appears to be behind the upstream Lexical demo in both package version and table feature coverage.

We should:

• upgrade @lexical/* to a current upstream version
• add the table features already present in the upstream Lexical demo
• identify any remaining gaps in table behavior/export compatibility
• consider additional table styling controls that users will expect

Requested work

1. Upgrade upstream Lexical dependencies

Bring Payload's Lexical integration up to date with the current supported upstream Lexical version.

2. Add missing table features that already exist in the Lexical demo

Please compare Payload's table module against the upstream Lexical demo and add missing features such as:

• Cell background color
• Vertical cell alignment
• First-row freeze
• Any other table actions already supported by the upstream Lexical demo but missing in Payload

3. Ensure feature parity in rendering/serialization

Any supported table properties should round-trip correctly through:

• editor state
• HTML conversion
• JSX conversion
• server rendering

4. Consider additional table enhancements

In addition to upstream parity, it would be great to consider table styling controls such as:

• Borders
• Border color
• Per-side borders
• Horizontal alignment
• Clear/reset cell formatting
• Other table/cell styling controls

Why this matters

Payload's table UX currently feels behind upstream Lexical, and users expect modern table editing controls. Keeping this closer to the upstream demo will improve editor experience and make future Lexical upgrades easier.

Acceptance criteria

• @lexical/* is upgraded to a current supported upstream version
• Payload table actions are reviewed against the upstream Lexical demo
• Missing upstream demo table features are implemented
• Supported table properties are preserved across rendering/export paths
• Remaining enhancement ideas like borders and richer styling are tracked if not included in the initial implementation
