It should be similar to SubQuery, a new interface should be introduced. Let me know if you need any help.

I see what you mean about being similar to SubQuery.

I'm thinking the usage will probably look something like this:

SOQL.typeof.of(Task.Who)
  .with(
    SOQL.whenIs.of(User.SObjectType)
      .with(...)
      .with(...)
  )
  .with(
    SOQL.whenElse
      .with(...)
  )

That's a lot of with though, and that of.of is pretty bad.

Another option would be to always require a reference to the SObjectType in withs and add a withElse, which would look like this

SOQL.typeof.of(Task.What)
  .with(Account.SObjectType, ...)
  .with(Account.SObjectType, ...)
  .with(Contact.SObjectType, ...)
  .withElse(....)

would probably also have a static method as typeof(SObjectField), so it could be used without the of

I like it, great job. A few suggestions:

1. Type can be a static variable, uppercase to show that it's returning a class instance + to match the existing logic (screenshot)
2. I see that when isn't reserved keyword so we can use it to keep the code as similar as possible to standard TYPEOF

SOQL.of(Event.SObjectType).with(
    SOQL.Type.of(Task.What)
       .when(Account.SObjectType).then(Account.Phone, Account.NumberOfEmployees)
       .when(Opportunity.SObjectType).then(Opportunity.Amount, Opportunity.CloseDate)
       .whenElse(Event.Name, Event.Email)
       .end() // or end can be added automatically
).toList();

then can know to which when it's added. Check this.builder.latestOrderBy. It has something similar.
