Allow extending the `Statistics` class with custom fields

• This would be useful e.g., for adaptive crawling stats - the current extension mechanism is very clunky
• in the Python counterpart, we parametrize crawlers with TStatisticsState, an extension of a StatisticsState Pydantic model
